Elstar - the Superb
Elstar is a cross between Golden Delicious and Ingrid Marie, originating in 1955 in the Netherlands. Distribution since 1972.
Description: medium-sized, depending on when they are picked cherry red to crimson or yellow patches, juicy-tender bite, exotic-spicy fragrance, sweet accents with limited acidity
Use: as dessert apples, especially raw or for salads because they do not turn brown. Good taste even after longer storage period
Special Characteristic: initial tests indicate a limited allergenic potential.
Holsteiner Cox - the Nordic variety
Holsteiner Cox is a regional variety, which was cultivated in Schleswig-Holstein in 1920 and is well-suited to the harsh North German climate.
Description: medium-sized to large, various colour combinations from pastel yellow-green to cherry and strawberry red shades possible, full apple flavour with spicy fragrances and an intensive after-taste, clearly noticeable sour-sweet components, less acidity in case of longer storage period
Use: as dessert apples, for baking and cooking
Pinova - the one with the crunch
Pinova was cultivated from a cross between Clivia and Golden Delicious in Dresden/Pillnitz. Evelina is a red Pinova variety.
Description: medium-sized, tapering shape towards blossom, pomegranate-coloured, marked by varieties of green-yellow colours, smooth skin, compact white flesh, firm bite, harmoniously sweet with mild acidity, slight quince-like taste

Jonagored - the dependable variety
Jonagored is a red Jonagold variety which was discovered in Belgium towards the beginning of the 1980s. It is very widespread in Northern Germany, as colours are more optimal in this climate than those of the standard Jonagold.
Description: dark red interspersed with sunny yellow colours, crunchy bite, compact flesh, tangy juicy discharge while chewing, refreshing fruity flavour with slight acidity
Use: as dessert apple, for cooking and baking, very long shelf life
Topaz - the Wild
Topaz is a cross between Rubin and Vanda, cultivated in the Czech Republic in 1984.
Description: vertical stripes and dotted red texture predominate over a pastel yellow, firm and juicy tangy flesh, clearly acidic lemony flavour, followed by a strong fruity sweetness, evokes memories of old apple varieties

Ambassy - the early one
This early apple is a Delbarestivale variety, a cross between Stark Jongrimes and Golden Delicious, cultivated in 1956.
Description: cylindrical, firm, medium-sized, red-cheeked and green with stripy texture and characteristic dots (lenticels), fresh juicy apple with a fruity combination of fragrances, more sweet than sour, a choice apple, long-lasting and mild
Use: to be eaten fresh, raw and used for salads, limited shelf life
Gerlinde - the spicy one
Gerlinde is a late early variety with a relatively long shelf life. Cross between Elstar and a numbered variety, cultivated in 1980 in Ahrensburg, Schleswig-Holstein.
Description: small to medium-sized apple with yellow-red grain, gentle, soft bite, dominant blossomy fragrances, combined with distinct acidity and reserved sweetness, slightly earthy, full of character

Marnica (Jonagold) - the Mild
Cross between Jonathan and Golden Delicious. Originates from the USA in 1943, on the market since 1968. In North Germany mostly the red varieties, such Marnica and Rubinstar are cultivated, as colours are more optimal.
Description: large apple with patchy red and dotted sunny yellow, firm, compact flesh, striking astringent effect in the mouth, characteristic savoury flavour, sweet
Use: Use: as dessert apple, suitable for cooking and baking, but limited acidity
Royal Jonagold - the early Jonagold
Red and very early Jonagold variety. Discovered by an "Altländer" fruit farmer in his Jonagold orchard around 2000.
Description: beautiful red-yellow stripy, evenly formed, round fruits, crunchy firm flesh. Spicy-sweet, full-bodied flavour
Special Characteristic: early harvest at the beginning of September, can be enjoyed immediately but long shelf life nonetheless (the original Jonagold can only be picked and eaten towards mid or end of October). Suitable for eating fresh as well for processing purposes.
Boskoop - the baked apple
The Boskoop was discovered as a chance seedling in 1856 in Boskoop in the Netherlands. Today, primarily the "Red Boskoop" variety is cultivated.
Description: large, round, earth-coloured red and ochre yellow varieties, russeted, dry skin, gentle bite in slightly floury flesh, dominant savoury apple acidity and supporting sweetness
Use: The classic apple for baking and cooking, at the same time high sugar and acidity content, long shelf life due to not requiring very cold storage conditions
Dalinbel - apple for children
Dalinbel is a cross between Elstar and a French cultivar.
Description: medium to large, broad shady red apple with yellow surface, criss-crossed with red colour, matt appearance, slight russets on stalk and calyx, gentle bite in soft flesh, distinctive fruity sweetness with mild impression of acidity resides in mouth for a long time
Use: as dessert apple, for salads, ideal apple for children due to sweetness
Rubinola - the Red
Rubinola is a cross between Prima and Rubin, cultivated in the Czech Republic in 1980.
Description: medium-sized, ball-shaped, smooth skin, slightly fatty, many-layered shades of red ranging from crimson to sunny yellow, mineral fragrance, juicy, lemony, firm and compact in mouth with appealing sweetness and long-lasting acidity.
Santana - the low-allergen apple
Santana is a new scab-resistant late autumn variety, cross between Elstar and Priscilla in the Netherlands.
Description: large, roundish, yellow-red colour variations, limited distinction, fatty skin, crunchy bite, mature fragrance, taste delicate and soft like exotic fruits, characterised by distinctive acidity
Use: as dessert apple, for cooking and baking
Special Characteristic: is considered low in allergens, is even marketed in the Netherlands as a "low-allergen apple"
Autento - the new variety
Autento is a cross between Dellogune and Cox Orange. This cultivar, described as a healthy scab-resistant plant, originates from France.
Description: medium-sized, yellow-green primary colour with patchy matt-red topcoat, creamy fragrance, slightly blossomy and delicate, almond-like, distinctive sweetness is combined with mild acidity and slight astringency in taste, intriguing apple with mild and gentle character
Use: as dessert apple, for salads
Braeburn - the Exotic
Braeburn was discovered in 1952 in New Zealand by "Lady Hamilton", presumably as a seedling. This sophisticated variety requires a warm climate and is therefore rarely encountered on "Altländer" organic farms.
Description: medium-sized, longish, smooth, yellow-green skin with 30-70 % brown-red topcoat.
Fresh fragrance, acidic-dry, like fresh wood. Taste slightly marzipan-like, very juicy flesh and crunchy bite lend the apple a very dynamic character
